Homemade Mayonnaise is a much healthier option than the shop-bought one because it provides all the added health benefits of monounsaturated fats and powerful antioxidants contained in olive oil.
It's very easy and quick to make, and it can be kept in the fridge for up to two weeks.
Homemade Mayonnaise
Ingredients:
160g extra virgin olive oil
1 egg
1 egg yolk
1 tsp Dijon Mustard
1 tsp lemon juice
1 tsp apple cider vinegar
a pinch of sea salt
Method:
whisk the egg and the egg yolk
add salt, lemon juice, mustard and apple cider vinegar
slowly pour the olive oil while mixing with a hand mixer or a blender.
