Shiitake mushrooms are packed with powerful nutrients. They are a great source of vitamin B5, copper and they even contain some vitamin D. The compounds in shiitake mushrooms help boost the immune system, protect against cell damage, support cardiovascular health, and reduce inflammation.
Courgettes are a great source of fibre, vitamins C and A. They support digestion, reduce blood sugar levels and promote heart health.
Butternut squash is rich in vitamin C, A, and potassium as well as many other minerals and vitamins. It is also a good source of carbohydrates.
This dish is well balanced as it is, but serving it with cooked quinoa will increase its fibre and protein content even more.
Turmeric chicken bites with courgettes, shiitake mushrooms and butternut squash (2 servings)
Ingredients:
2 chicken breasts (cut into bites)
1 cup butternut squash (diced)
1 courgette (diced)
150g Shiitake mushrooms
1 tbsp ground turmeric
2 tbsp EVO
fine sea salt
garlic (to taste)
Method:
Marinate the chicken breast bites in one tbsp of extra virgin olive oil, ground turmeric, garlic (to taste) and a pinch of salt.
In the meantime, stir fry the vegetables in a pan with 1 tbsp of EVO and a pinch of salt. When ready, transfer to a serving dish and use the same pan to cook the chicken in its marinating sauce.
When the chicken is nice and golden, add it to the serving dish with the cooked vegetables. Quick to make, nutritious and delicious. Enjoy!
