Turmeric chicken bites with courgettes, shiitake mushrooms and butternut squash.

Chicken is an excellent source of protein, essential to maintain muscle mass. It is also rich in selenium, which supports immune function and thyroid health, B vitamins and phosphorus.

Shiitake mushrooms are packed with powerful nutrients. They are a great source of vitamin B5, copper and they even contain some vitamin D. The compounds in shiitake mushrooms help boost the immune system, protect against cell damage, support cardiovascular health, and reduce inflammation.

Courgettes are a great source of fibre, vitamins C and A. They support digestion, reduce blood sugar levels and promote heart health.

Butternut squash is rich in vitamin C, A, and potassium as well as many other minerals and vitamins. It is also a good source of carbohydrates.

This dish is well balanced as it is, but serving it with cooked quinoa will increase its fibre and protein content even more.
